Preparation
  1. Place quinoa and water in Multipurpose Steamer. Cover; microwave 12 min.
  2. Meanwhile, slice chicken into bite-sized pieces. Thinly slice peppers and onion. Drain and rinse 12 cup beans.
  3. Remove quinoa from steamer and arrange in two serving bowls. Combine chicken, peppers, onion, and seasoning in steamer (don’t rinse). Cover; microwave on high, 4 min, or until chicken is cooked through.
  4. Arrange chicken mixture, beans, and spinach on top of quinoa.
Tips

Make it Vegetarian: swap chicken for lentils, chickpeas, or pinto beans
